A Beginning That Started With Necessity
For many chefs, a culinary career begins with a love for food, a family tradition, or a dream of working in a professional kitchen. For Roy Hazboun, the story began very differently.

At just 13 years old, Roy entered the working world because he wanted to support himself and continue his education. Cooking was not initially a carefully planned career choice. It was simply an opportunity to work, learn, and become more independent.
But what began as a necessity slowly developed into something much bigger.
The young teenager who first entered restaurant kitchens eventually discovered that he was drawn to the energy of hospitality, the discipline of professional kitchens, and the creativity involved in transforming simple ingredients into memorable experiences. Over time, cooking became a hobby, then a passion, and finally his profession.
That early beginning would go on to shape the way Roy approaches his career today.
Learning Before Earning
One of the most defining chapters of Roy’s journey came during his early years in the industry. Determined to learn as much as possible, he worked in 12 different restaurants without asking for payment.
For Roy, the value was not in the paycheck. It was in the experience.
Every kitchen gave him an opportunity to observe a different system, work with different chefs, understand new techniques, and experience different approaches to food and restaurant operations. Instead of seeing his lack of experience as a limitation, he treated every opportunity as a classroom.
That mindset became one of the strongest foundations of his career.
The experience also taught him lessons that went beyond cooking. Discipline, humility, patience, perseverance, teamwork, and continuous learning became essential parts of his professional character.
Looking back, those years were not simply about learning recipes or kitchen techniques. They were about understanding how the hospitality industry works from the ground up.
When Cooking Became Something Bigger
As Roy gained experience, his ambitions began to expand.
He realized that his passion was not limited to preparing food. He became increasingly interested in the bigger picture behind successful hospitality businesses.
Why does one restaurant concept stand out while another struggles to find its identity? How should a menu be structured? How can a kitchen operate more efficiently? What makes a dish memorable? How can a team be trained to deliver consistent quality?
These questions gradually moved Roy toward culinary consulting.
Today, through Roy Hazboun Consultancy, he works across different areas of restaurant and hospitality development. His work includes restaurant concept development, menu creation and engineering, kitchen design and operations, recipe standardization, staff training, and pre opening support.
This allows him to combine two sides of his personality as a chef. One is creative and focused on food. The other is strategic and focused on building businesses that can perform successfully.
For Roy, great food is only one part of a successful hospitality concept. The systems, people, menu, kitchen, identity, and guest experience must work together.
Building Concepts, Not Just Menus
The modern hospitality industry demands more than good food.
Restaurants compete not only through flavor but also through identity, consistency, presentation, efficiency, customer experience, and the ability to create something people remember.
This is where Roy’s consultancy approach becomes particularly meaningful.
Rather than simply creating dishes, he looks at the complete culinary structure behind a business. A restaurant needs a concept that makes sense, a menu that reflects that concept, a kitchen designed to support it, trained employees who understand the standards, and systems that allow quality to remain consistent.
His years of working in different kitchens have given him a practical understanding of these challenges.
That experience now allows him to help restaurants and food businesses develop their ideas from the earliest stages and turn them into functioning hospitality concepts.
It is a role that requires creativity, but also business thinking, communication, organization, and the ability to understand what a client is trying to achieve.
Sharing Experience With the Next Generation
For someone who learned much of his craft through hands on experience, teaching has become another important part of Roy’s professional journey.
Alongside his consultancy work, he serves as a Culinary Instructor at Notre Dame University, where he shares his knowledge with aspiring culinary professionals.
For Roy, education is more than passing on cooking techniques. It is about helping young people understand the realities of the industry and giving them the confidence to develop their own abilities.
His own journey gives him a unique perspective.
He knows what it feels like to enter the industry with limited experience and a strong desire to learn. He understands that opportunity, guidance, and persistence can completely change the direction of someone’s career.
That is why developing young culinary talent has become an important part of his vision.
He wants the lessons he gained through years of work to continue through the people he teaches and mentors.
A New Culinary Chapter
Today, Roy is entering another exciting stage of his career.
One of his major goals is to continue expanding Roy Hazboun Consultancy in Lebanon and internationally while exploring new opportunities within the hospitality sector.
At the same time, he is preparing to launch his own niche catering concept.
The project represents something different from consulting for other businesses. It gives Roy the opportunity to take everything he has learned throughout his career and transform those lessons into a culinary concept shaped by his own vision.
It is a chance to create an experience that reflects his approach to food, hospitality, creativity, and quality.
For a chef who has spent years helping other businesses build their identities, creating something of his own marks an important personal milestone.
Representing Lebanese Talent Beyond Borders
Another important part of Roy’s vision is his desire to represent Lebanese culinary talent internationally.
Lebanese cuisine already carries a strong cultural identity, but Roy believes Lebanese chefs and hospitality professionals can contribute to the global industry through creativity, professionalism, innovation, and a deep understanding of their culinary heritage.
His international consultancy work gives him an opportunity to take that perspective beyond Lebanon.
Rather than viewing culinary traditions as something that must remain unchanged, Roy sees them as a foundation for creativity. His approach is about respecting strong culinary roots while remaining open to new techniques, influences, and ideas.
That balance between tradition and innovation has become an important part of his professional identity.
The Achievement Behind the Title
Roy considers his greatest achievement to be much more personal than a professional title or business milestone.
It is the fact that he transformed a difficult beginning into a career he can genuinely be proud of.
The 13 year old who started working to support himself and continue his studies could not have known where that first step would eventually lead. Years later, he has become a chef, culinary consultant, educator, and entrepreneur.
But perhaps the most meaningful part of that transformation is what he now does with the experience.
His career gives him the opportunity to help businesses grow, teach aspiring chefs, develop new culinary concepts, and create opportunities for people entering the hospitality industry.
His journey shows that success does not always begin with perfect circumstances. Sometimes it begins with a decision to keep moving forward.
A Philosophy Built on Determination
If there is one message that defines Roy’s journey, it is simple.
If you truly want something, you will find a way.
His experience has taught him that talent alone is not enough. Determination, discipline, consistency, sacrifice, and the willingness to keep learning are what transform potential into progress.
There were challenges along the way, but Roy refused to allow difficult circumstances to determine what he could become.
That philosophy continues to influence the way he works today.
Whether he is developing a restaurant concept, creating a menu, training a team, teaching students, or preparing his own catering venture, the same mindset remains at the heart of his work.
Keep learning. Keep creating. Keep moving forward.
Looking Toward a Larger Culinary Future
Roy Hazboun’s story is ultimately about evolution.
A teenager who entered a restaurant kitchen because he needed to work became a chef. The chef became a consultant. The consultant became an educator and entrepreneur. Now, he is building his own culinary concept while looking toward a larger international future.
His ambition is not simply to create successful dishes or individual restaurants. He wants to contribute to the wider hospitality industry and leave something meaningful behind for the people who come after him.
For Roy, the journey is still unfolding.
His next chapter will be defined by new concepts, international opportunities, culinary education, entrepreneurship, and a continued commitment to Lebanese talent.
And if his journey so far is any indication, the most interesting part of his story may still be ahead.
