With more than a decade of experience across fine dining, luxury hospitality and high-end events in Algeria, Italy and the UAE, his journey reflects the dedication required to turn culinary passion into an international career.

Today, Brian is a Head Chef at Tender & Slice in Dubai, where he leads kitchen operations for luxury events and VIP clientele. His expertise spans Mediterranean and fusion cuisine, Italian pasta and pizza, modern plating and large-scale event operations.

Behind his current position, however, is a career built step by step through different kitchens, countries and responsibilities.

From Algiers to Professional Kitchens

Brian’s culinary journey began in Algiers, Algeria, where he developed his foundation through professional culinary education.

He studied cooking and pastry at LA CHEF School and later completed a Certificate of Professional Competence in Hospitality and Cooking at the Rouïba Apprenticeship Center, graduating with distinction.

These experiences taught him that becoming a successful chef requires much more than knowing how to prepare food. Discipline, organisation, precision, creativity and the ability to perform under pressure are equally important.

In 2015, Brian began building his professional kitchen experience, taking on roles across Italy and Dubai. His progression through positions including Chef de Partie, Sous Chef and Pastaiolo allowed him to develop a strong foundation in Italian cuisine, banquet operations and high-volume service.

Each kitchen became another opportunity to learn.

Developing His Craft Across Italy and Dubai

Working in Italy and Dubai exposed Brian to different culinary environments and professional standards.

During his early career, he developed particular expertise in fresh handmade pasta and Italian pizza, including Napoletana, Romana and Siciliana styles.

His experience later expanded into Mediterranean and contemporary fusion cuisine, allowing him to combine traditional culinary techniques with more modern approaches to presentation and menu development.

This international experience became an important part of Brian’s identity as a chef. Rather than limiting himself to one culinary tradition, he continued developing the ability to work across different styles while maintaining respect for ingredients and technique.

Growing Through Luxury Hospitality

Brian’s career continued to progress through leading hospitality environments.

At Hotel Marriott La Villa in Algiers, he worked as Senior Sous Chef and managed a team of 10 chefs, overseeing mise-en-place, kitchen workflow and consistency for an international clientele.

He later joined Radisson Resort Palm Jumeirah in Dubai as Sous Chef, where he worked across à la carte and international buffet operations during the opening of the luxury resort. He also collaborated with the Head Chef on fine-dining menus and trained the Italian section in fresh pasta and artisanal pizza.

These experiences strengthened both his culinary skills and his understanding of kitchen leadership.

At Hilton Al Habtoor Palace Private Club, Brian took on the role of Sous Chef, supervising luxury à la carte and banquet operations averaging around 150 covers per night while contributing to fine-dining menu development and mentoring junior chefs.

Each position brought greater responsibility and reinforced the importance of consistency, teamwork and preparation.

Experience at Michelin-Level Events

One of the most demanding chapters of Brian’s career came through his work with Monarch Events and Ossiano, including a Michelin-star collaboration.

As Junior Sous Chef, he supported tasting-menu services for events involving up to 1,000 guests, working with menus associated with Chef Grégoire Berger’s Ossiano.

Large-scale fine-dining events require an exceptional level of organisation. Hundreds of dishes may need to be prepared and plated with precision while maintaining consistency throughout service.

For Brian, these experiences demonstrated the importance of preparation, communication and teamwork when operating at the highest levels of event dining.

They also expanded his confidence in managing complex culinary operations and serving VIP audiences in demanding environments.

Becoming Head Chef

Brian’s progression eventually led him to his current position as Head Chef at Tender & Slice in Dubai, a role he has held since November 2024.

Here, he leads the kitchen for luxury events and VIP clientele, overseeing nightly services of around 100 covers as well as plated events for more than 300 guests.

His responsibilities extend beyond preparing dishes. He oversees kitchen operations, leads the team, develops Mediterranean and fusion menus and works closely with front-of-house teams to ensure that food and service operate seamlessly together.

For Brian, leadership is about creating an environment where every member of the kitchen understands the standard expected of them.

A successful service depends on everyone working toward the same goal.

Discipline Over Talent

Throughout his career, Brian has developed a philosophy centred on consistency, discipline and respect.

He believes that natural talent can open a door, but maintaining high standards is what allows a chef to build a lasting career.

As he puts it:

“Consistency and discipline matter more than talent. A great dish once is luck, but a great dish every night is a team and a standard.”

That belief influences his approach to kitchen leadership. He values preparation, teamwork, respect for ingredients and continuous learning.

His experience has also taught him that memorable dining experiences are rarely created by one person alone. Behind every successful service is a team working together with a shared commitment to quality.

A Culinary Style Built on Tradition and Creativity

Brian’s culinary identity brings together several influences.

His Mediterranean background provides a strong foundation, while his years working with Italian cuisine have given him extensive knowledge of pasta, pizza and traditional techniques.

At the same time, his experience in Dubai’s international hospitality environment has encouraged him to explore fusion cuisine and contemporary presentation.

This balance allows him to respect the origins of a dish while remaining open to new interpretations.

For Brian, creativity does not mean abandoning tradition. It means understanding the foundation well enough to develop something distinctive from it.

Looking Toward New International Opportunities

After building more than a decade of experience across Algeria, Italy and Dubai, Brian is now looking toward the next stage of his international career.

His ambition is to continue developing as a culinary leader and eventually bring his Mediterranean roots, Italian expertise and experience in luxury hospitality to new markets.

He is particularly interested in opportunities in New Zealand, where he hopes to continue his journey in a Head Chef or Sous Chef position and contribute his experience to a new culinary environment.

For Brian, moving into a new market would not simply be another career step. It would be another opportunity to learn, collaborate and continue evolving as a chef.

His guiding principle remains simple:

“Respect the ingredient, respect the team, and never stop learning.”

An International Journey Built One Kitchen at a Time

Brian Kheloufi’s story is a reminder that culinary careers are rarely built overnight.

From his training in Algiers to professional kitchens in Italy and Dubai, he has progressed through different roles, cuisines and levels of responsibility. Each stage has added another layer to his understanding of food, hospitality and leadership.

Today, as a Head Chef leading teams and large-scale dining operations in Dubai, he represents the result of years of discipline, practical experience and continuous learning.

Yet Brian sees his journey as far from complete.

His ambition remains to keep developing, explore new culinary environments and take his experience into international markets.
