For Nicolas Lambert, pastry was never simply a career choice. It was part of his childhood long before he understood where it could take him. Born and raised in Épinal, France, Nicolas grew up in a family where baking was part of everyday life. That early exposure created something deeper than professional ambition. It developed a natural curiosity about ingredients, technique and craftsmanship. What began as childhood fascination would eventually become an international career spanning some of the world’s most respected kitchens.
Today, with more than two decades of experience, Nicolas remains driven by the same curiosity that first brought him into the kitchen.
The First Step Into a Professional Kitchen
At just 15, Nicolas began his first apprenticeship with Philippe Torti at Pâtisserie du Musée in Épinal while continuing his culinary studies. It was an important transition from simply growing up around pastry to understanding the discipline required to master it.
The early years demanded patience, precision and commitment. Nicolas continued developing his skills through different professional environments in France, gaining experience with respected pastry professionals and learning how different kitchens approached creativity and production.
His journey brought him into contact with chefs such as Sébastien Bouillet, Christophe Michalak and Jérôme de Oliveira. Each experience contributed something different to his development, from technical precision to creative thinking and leadership.
Rather than following one fixed formula, Nicolas learned to absorb lessons from every kitchen he entered.
Learning From France’s Finest Pastry Kitchens
Paris became an important chapter in Nicolas Lambert’s development. In 2011, he joined the renowned Plaza Athénée, where he worked under the influence of celebrated pastry chef Christophe Michalak.
Working in such a demanding environment pushed Nicolas to refine his technique and understand the level of detail expected in luxury hospitality. It also introduced him to a world where pastry was not only about taste but also presentation, consistency, timing and the ability to perform under pressure.
His achievements during this period demonstrated that his early promise was turning into genuine expertise. Yet the biggest change was still ahead.
Nicolas was preparing to take French pastry beyond France and into the international culinary world.
Hong Kong Changed His Perspective
Nicolas’s move to Hong Kong marked a major turning point. He joined Caprice at Four Seasons Hotel Hong Kong, stepping into an international environment where he had to adapt not only to a new culinary culture but also to a new language and way of life.
The experience challenged him to look at pastry from a broader perspective. He learned how to understand local preferences while remaining connected to the techniques and traditions that had shaped his French identity.
During his time in Hong Kong, Caprice progressed to three Michelin stars, while Nicolas received significant recognition for his work. He was named Best Pastry Chef Hong Kong and Macau by Tatler in 2016 and again in 2018. In 2018, he was also recognised as Asia’s Best Pastry Chef by The World’s 50 Best Restaurants.
These achievements brought international attention, but for Nicolas, they became another reminder that progress comes from teamwork, discipline and continuous learning.
From Recognition to New Challenges
After Hong Kong, Nicolas continued his international journey with Four Seasons Hotel Lion Palace St Petersburg in Russia. The move introduced him to a completely different environment, culture and climate.
Instead of seeing the change as a challenge to avoid, Nicolas embraced it as another opportunity to learn. Russia influenced his creative thinking and encouraged him to explore ingredients and flavours that were different from those he had encountered in France and Hong Kong.
One of the creations associated with this period was The Bee, a dessert that reflected his ability to turn local inspiration into a refined pastry experience. The concept would later evolve again when Nicolas moved to Dubai.
That evolution became a defining feature of his creative philosophy. A successful creation does not always need to remain unchanged. It can grow with its surroundings.
Dubai Became the Next Chapter
In 2021, Nicolas Lambert moved to Dubai and became Senior Executive Pastry Chef for Four Seasons Hotels in the city, overseeing pastry operations at Four Seasons Resort Dubai at Jumeirah Beach and Four Seasons Hotel Dubai International Financial Centre.
Dubai offered Nicolas another opportunity to combine his French foundation with the flavours, ingredients and cultural influences of the Gulf.
His work quickly attracted recognition. He received the Prix d’Excellence from Relais Desserts in 2021, followed by Pastry Chef of the Year recognition from Gault and Millau in 2022 and Hotel Pastry Chef of the Year recognition from Caterer Middle East.
Yet awards are not the only measure of his success.
For Nicolas, one of the most meaningful parts of his current role is the opportunity to work with people, develop teams and watch younger chefs become more confident in their abilities.
The Bee and the Art of Evolution
Among Nicolas Lambert’s most recognisable creations is The Bee, a dessert that has continued to evolve throughout his career.
The original concept was influenced by his time in Russia, where ingredients such as honey and sea buckthorn helped shape the dessert. After arriving in Dubai, Nicolas transformed the creation again, incorporating flavours connected to the region.
Later versions introduced ingredients such as dates, lemon, locally sourced honey, pistachio and tahini, demonstrating how one idea can change while maintaining its original identity.
This approach reflects Nicolas’s wider philosophy. He does not believe creativity requires abandoning tradition. Instead, he sees tradition as a foundation from which new ideas can grow.
Success Means Helping Others Grow
Despite the awards and international recognition attached to his name, Nicolas speaks about achievement in a remarkably personal way.
Rather than identifying one trophy or title as his greatest accomplishment, he finds greater satisfaction in seeing people around him develop.
For him, leadership is not simply about being the person at the front of the kitchen. It is about sharing knowledge, encouraging confidence and giving others the opportunity to discover their own strengths.
That perspective is especially important in an industry where long hours, high standards and constant pressure can test even the most passionate professionals.

Today, Nicolas Lambert continues to create, lead and experiment in Dubai while remaining connected to the values that shaped him as a young apprentice.
His story is not simply about becoming an internationally recognised pastry chef. It is about understanding that meaningful success is built gradually through discipline, curiosity, relationships and a willingness to begin again in unfamiliar surroundings.
From watching his parents bake in Épinal to creating sophisticated desserts for an international audience, Nicolas has travelled a remarkable distance without losing sight of where he started.
