From Sydney to the World of French Pastry
Richard Hawke’s journey into pastry began in Sydney, Australia, where an early encounter with a classic French pastry chef changed the direction of his career. What started as professional training soon became a deeper curiosity about how pastry works, how ingredients behave and how traditional techniques can be adapted for changing customer needs.
After completing his apprenticeship, Richard made a bold decision. He moved to France with the ambition of learning from some of the most respected names in the pastry world. He settled in Lyon, one of France’s important culinary regions, and joined the team of Jérôme Languillier, a World Pastry Champion.
The experience gave Richard an opportunity to strengthen his technical skills while understanding the discipline behind French pastry. His years working in different pastry kitchens around Lyon helped him develop the foundation that would later become central to his international consulting career.
For Richard, pastry was never simply about producing something beautiful. It was about understanding why something works.
Building Knowledge Through Teaching and Experience
Richard’s professional journey eventually took him into education at the École Nationale Supérieure de la Pâtisserie, associated with Alain Ducasse Education. From 2012 to 2016, he worked as an international pastry teacher, training students from different backgrounds and helping them develop strong technical foundations.
Teaching became an important part of Richard’s identity because it required more than knowing a recipe. A professional chef has to understand the reason behind each technique and communicate that knowledge clearly.
His approach has consistently focused on mastering fundamentals, working with precision and developing the confidence to question established methods. This became especially important as Richard began exploring pastry for people whose dietary needs could not be addressed by conventional recipes.
His philosophy can be summed up in a simple idea: “When we learn pastry we do not get taught how to really understand the ingredients in our recipes.”
That thinking would eventually become one of the defining ideas behind his work.
A New Challenge in Morocco Changed His Direction
One of the biggest turning points in Richard’s career came when he moved with his family to Casablanca, Morocco. He was brought into a project connected with the development of a pastry shop focused on products suitable for customers with dietary restrictions.
The challenge was unlike anything he had experienced before.
Richard had to look beyond traditional pastry formulas and understand gluten free, lactose free and vegan production in much greater depth. Ingredients that had always played familiar roles suddenly had to be replaced, reformulated or used in completely different ways.
This period pushed him into business development, intercultural management and product research while also changing his understanding of what modern pastry could become.
Instead of treating dietary restrictions as a limitation, Richard began looking at them as an opportunity to rethink pastry from the ground up.
That mindset continues to influence his work today.
Research Became the Heart of His Pastry Philosophy
Richard’s current approach is strongly connected to research and development. His work involves questioning pastry bases, testing ingredients and studying how familiar textures and flavours can be recreated through alternative formulations.
His specialization includes vegan, gluten free and lactose free pastry. The goal is not simply to remove an ingredient from a traditional dessert. The bigger challenge is to create a finished product that still delivers the texture, balance, appearance and pleasure expected from high quality pastry.
This requires patience.
It also requires a willingness to fail, change a formula and start again.
Richard’s laboratory has therefore become an important part of his professional life. He continually develops and refines creations, with his family sometimes becoming the first people to taste and critique new recipes.
This personal side of his work adds another dimension to his career. Behind international masterclasses and professional consulting is a chef who continues to experiment, learn and question his own methods.
From Consultant to International Educator
Since 2016, Richard has developed an international career as a pastry consultant and instructor. His professional work has included collaborations with schools and clients in different parts of Europe, the Middle East and Australia.
His teaching and consulting experience has included institutions such as INBP in Rouen, ICEP in Bucharest, Atelier by Australis in Sydney, Le Cordon Bleu London and Bishulim Culinary School in Tel Aviv.
His international background has become one of his greatest professional assets. Richard understands French pastry culture, but his experience also allows him to adapt his knowledge to different markets, students and business environments.
His masterclasses are not simply demonstrations. They are opportunities to explain the thinking behind pastry, from ingredient functionality to modern techniques and product development.
For aspiring chefs, this can make complex ideas easier to understand and apply in their own kitchens.
Making Pastry More Accessible
Richard’s work also reflects a wider change taking place across the pastry industry. Consumers are increasingly interested in plant based products and alternatives for people who cannot consume gluten or lactose.
For pastry professionals, this creates both challenges and opportunities.
Richard approaches this shift through technical research rather than shortcuts. His creations demonstrate how alternative ingredients can be used to develop desserts that remain visually refined and technically precise.
His work with vegan and allergen conscious pastry has also been presented through professional demonstrations and published recipes. These creations show his interest in maintaining the character of sophisticated pastry while changing the ingredients used to build it.
That balance between tradition and experimentation has become central to Richard’s professional identity.
Recognition Built Through Continuous Learning
Richard’s career has also included recognition in competitive pastry environments. He achieved first place for an artistic chocolate showpiece at the 2015 Challenge des Mains d’Or and third place for chocolate entremets and a sugar showpiece at the 2014 Asian Pastry Cup with the Australian Pastry Team.
Such achievements are important, but Richard’s journey suggests that professional growth does not stop with awards.
His career has continued to evolve through teaching, consulting, international travel and research. Each new environment has presented another opportunity to learn.
That willingness to keep questioning is perhaps what makes his story particularly relevant to the next generation of pastry professionals.
What Comes Next for Richard Hawke
Today, Richard is based in France and continues to balance research, international travel, consulting and family life. His work remains focused on creating new pastry concepts while sharing knowledge with chefs and students around the world.
His professional journey also reflects how a chef can move beyond the traditional boundaries of a kitchen. Richard has developed from a pastry apprentice in Sydney into a French trained chef, educator, international consultant and specialist in alternative pastry.
His story is ultimately about adaptation.
The pastry industry continues to change, and Richard continues to ask questions about what can be improved. Whether he is developing a new recipe in his laboratory, teaching a masterclass or helping a client create a new product, his focus remains connected to understanding the ingredients and techniques at a deeper level.
For Richard, innovation does not mean abandoning the foundations of pastry. It means understanding those foundations well enough to build something new.
That philosophy gives his work a distinctive place in modern pastry and explains why his journey continues to inspire chefs, students and professionals looking to rethink what is possible in the world of desserts.
