Born in Chhathar Panchakanya in Terhathum, Human grew up surrounded by simplicity, family traditions and the everyday rhythms of village life. At just 10 years old, he began learning traditional cooking and baking from his grandfather and mother. What started as childhood curiosity gradually became the foundation of a career that would take him from Nepal to some of the most prestigious luxury hospitality environments in the Middle East.
Today, with more than 21 years of international experience, Human has established himself as a respected name in pastry and bakery, contributing to luxury hotel openings, confectionery businesses, boutique concepts and high profile culinary projects.
A Childhood Curiosity Became a Lifelong Calling
Human’s earliest lessons were not about complicated techniques or sophisticated equipment. They were about patience, observation and respect for food.
Learning from his family taught him that great food is about much more than ingredients. It is also about heritage, emotion and the memories created around a table.
After completing his higher education at Tribhuvan University in Nepal, Human decided to take his culinary education further. His training at Lenôtre Paris introduced him to an entirely different world of pastry and bakery, where precision, discipline and creativity worked together.
At Lenôtre, he explored hot and cold kitchens, chocolate, pastry, viennoiserie and boulangerie. More importantly, he became fascinated by the science behind baking.
Fermentation, dough development, hydration, emulsification, chocolate tempering, fruit preparation and texture became more than technical subjects. They became questions he wanted to understand deeply.
For Human, baking was never simply about following a recipe. It was about understanding why a product behaves the way it does and how knowledge can transform a good creation into an exceptional one.
From Lenôtre Paris to Dubai’s Luxury Kitchens
Human’s professional journey took another major step when he joined the pre opening team of Sofitel Hotel JBR Marina in Dubai.
That opportunity became the beginning of an international career shaped by some of the hospitality industry’s most recognized names. Over the years, he worked across brands and properties connected with Accor, Starwood, Marriott International, Jumeirah Group, Kerzner International, Atlantis Hotels Group, Hilton Hotels Group and Dorchester Collection.
His career has included involvement in the opening and establishment of more than 17 five star, luxury and ultra luxury hotels, along with work connected to confectionery manufacturing and distribution.
Each environment brought different expectations, systems and culinary cultures. Rather than simply adapting to them, Human used every experience as another opportunity to expand his knowledge.
His journey from a line chef to senior leadership roles gave him a valuable understanding of every level of kitchen life. He knows the pressure faced by young chefs because he experienced those challenges himself.
That experience now influences the way he leads teams and develops talent.
Why Human Believes Fundamentals Still Matter
The pastry industry is changing rapidly. New equipment, technology and automation continue to reshape professional kitchens.
Human welcomes innovation, but he believes technology should support craftsmanship rather than replace it.
For him, the foundation of exceptional bakery products remains an understanding of fermentation, hydration, proofing, dough temperature, gluten development, mixing, resting and shaping.
A machine can measure temperature and control fermentation, but it cannot replace the judgment of an experienced baker who understands what dough is communicating through texture, elasticity and temperature.
This philosophy has remained central to Human’s approach to artisan, organic, sourdough, gluten free, lactose free and specialty bakery products.
His message to young chefs is straightforward. Before chasing the newest technology, master the fundamentals. Understand the ingredients. Learn the science. Develop your hands. Build experience.
Only then can technology become a powerful extension of craftsmanship.
Building Bakery Concepts, Not Just Products
Human’s expertise goes beyond production.
Throughout his career, he has been involved in menu development, operational planning, product development, team building and the creation of bakery concepts designed to offer more than food.
His work with Bonbon Café by Angelo Musa at The Lana Dubai, Dorchester Collection, reflects this broader approach.
The project required an understanding of viennoiserie, boulangerie, pastry, presentation, consistency and brand identity. It was about creating an experience that connected technical skill with the personality of the property.
The recognition received by the concept became an important milestone in Human’s career. Bonbon Café was recognized by La Liste 1000 as the Best Pastry Shop Opening in the World in 2024, highlighting the level of international attention surrounding the project.
For Human, however, the achievement represents more than an award. It demonstrates what can happen when creativity, teamwork, discipline and a clear culinary vision come together.
Recognition That Reflects Years of Dedication
Human’s career has brought several significant milestones.
He became the first Nepali national to receive a UAE Golden Visa as a professional pastry and bakery chef, a recognition that marked an important moment in his international career.
His leadership abilities were also recognized when he received the Best Manager of the Year title at The St. Regis Hotel.
He was nominated for Best Pastry Chef of the Year by The Pro Chef Middle East in 2020 and was later recognized as Best Bakery Chef in the Middle East in 2024.
Yet Human remains clear about what matters most to him.
Awards may celebrate achievement, but they do not define a career.
For him, the real measure of success lies in the people he has trained, the teams he has built, the standards he has helped establish and the guests who have experienced his work.
Leadership Through Knowledge and Trust
Human believes that a successful kitchen is ultimately built by people.
Technical ability alone cannot create a strong team. Leadership requires communication, trust, mentorship and patience.
Having learned from experienced chefs throughout his own career, Human now sees sharing knowledge as one of his greatest responsibilities.
He encourages young chefs to ask questions, make mistakes, experiment and develop their own identity.
His leadership philosophy is built around a simple principle. A great leader should not create people who depend on them. A great leader should develop people who can eventually lead others.
That belief has made mentoring an important part of his professional identity.

Even after more than two decades in the industry, Human does not consider himself finished learning.
The pastry and bakery world continues to evolve through changing consumer preferences, new ingredients, technology and emerging techniques. Human believes staying relevant requires curiosity and humility.
He encourages young professionals to master the basics, practice consistently, explore new ideas, learn from mistakes and respect traditional craftsmanship.
He also believes today’s young chefs have an extraordinary advantage because knowledge is more accessible than ever before.
Education, competitions, demonstrations, professional communities and digital resources can open doors, but discipline and practice remain essential.
