Born in 1980 in Strasbourg, France, Devoille discovered the joy of pastry in his family kitchen. At just 15 years old, he began making cakes with his mother. What started as a personal experience gradually became a professional calling.
That early connection remains important to his philosophy today. For Devoille, pastry has never been only about recipes, technical ability or presentation. It is about creating an emotion.
His professional journey would eventually take him from France to the United States, across Europe and Asia, and finally to the Middle East, where he has built one of the most distinctive chapters of his career.
Learning From Some of the Best in the Industry
After completing his pastry education, Devoille began developing his professional skills through international experience.
One of his early career-defining opportunities came at La Côte Basque in New York, where he spent a year strengthening both his pastry skills and his English. The Michelin star institution, led by Jean-Jacques Rachou, gave him exposure to an international dining environment and helped prepare him for the global career that followed.
He later returned to Paris and joined the world of Alain Ducasse, one of the most influential names in modern French gastronomy.
Working within the Alain Ducasse enterprise became a major turning point. Over more than a decade, Devoille moved through important roles, including work at Alain Ducasse au Plaza Athénée, before becoming Corporate Pastry Chef for the group.
The position brought responsibility on an international scale. He led dessert teams across numerous properties and travelled extensively to supervise pastry operations and dessert concepts in destinations including Las Vegas, Monaco, Doha and Tokyo.
The experience taught him something that would remain central throughout his career: luxury pastry requires consistency, but it also needs imagination.
From Global Luxury Hotels to International Pastry Leadership
In 2014, Devoille moved to Macao to join the pre-opening team at Wynn Palace.
The scale of the operation represented another major challenge. With thousands of rooms and multiple restaurants, the resort required a pastry operation capable of serving guests at an exceptionally high level while maintaining consistency across different outlets.
Devoille oversaw a team of 36 people across eight outlets. Among his responsibilities was the development of menus and the refinement of the resort’s macarons, while simultaneously managing the demands of a large and multicultural culinary operation.
After four years in Macao, his career took him to London, where he headed the pastry kitchen at Annabel’s, the renowned private members club.
Each destination added another layer to his professional identity. France gave him classical foundations. New York broadened his international perspective. The Alain Ducasse enterprise taught him scale and discipline. Macao challenged him with complexity, while London introduced another dimension of luxury hospitality.
Dubai would eventually bring these experiences together.
Christophe Devoille Finds a New Home in Dubai
In December 2019, Devoille joined the pre-opening team of Atlantis The Royal in Dubai as Executive Pastry Chef.
The project presented an opportunity to work on a major luxury destination from the ground up. Today, he oversees pastry development, creation and menu concepts across 17 outlets.
Such responsibility requires more than technical pastry expertise. It demands leadership, organization and the ability to inspire a large team while maintaining a consistent creative vision.
For Devoille, however, the objective remains surprisingly simple.
He wants to create happiness through pastry.
That philosophy influences the way he approaches both the guest experience and his role as a leader. A dessert should attract attention visually, but the real experience begins when the guest tastes it.
Texture, flavor, balance and surprise all have a role to play.
Building a Pastry Identity Beyond the Hotel Kitchen
Devoille’s career in Dubai has also allowed him to move beyond traditional hotel pastry operations.
In 2022, he introduced The Royal Tea Room Christophe Devoille at Atlantis The Royal’s lobby, creating a dedicated space where his pastry identity could be experienced more directly.
Then, in 2025, another significant chapter began with the opening of Maison Devoille at One&Only One Za’abeel.
Maison Devoille represents a more personal expression of his philosophy. Rather than being defined only by a hotel kitchen or a corporate pastry operation, the brand gives Devoille an opportunity to build a recognizable identity around craftsmanship, creativity, quality and generosity.
His ambition is now to continue developing Maison Devoille internationally while remaining connected to the values that shaped his career.
Leadership That Goes Beyond the Pastry Counter
For Devoille, professional success is not simply about creating impressive desserts.
It is also about people.
Throughout his career, he has worked with multicultural teams and developed young pastry professionals in demanding luxury environments. He believes that knowledge becomes more valuable when it is shared.
His leadership philosophy is built around setting an example, listening and helping others develop.
That approach is particularly relevant in modern hospitality, where the strength of a culinary operation depends heavily on teamwork. A talented chef may create an exceptional dessert, but a successful pastry department requires dozens of people working together with precision and trust.
Devoille wants the people around him to feel proud of what they accomplish together.

Whether interacting with a guest, a young commis, a colleague or another renowned chef, he believes everyone deserves respect.
His approach reflects a broader understanding of leadership. Titles may create authority, but character creates influence.
For Devoille, the higher a person rises, the more important it becomes to remain grounded.
Family Gives His Definition of Success Another Meaning
Behind the demanding world of luxury hospitality is another important part of Devoille’s life.
He is a husband to Julia and a father to his young son Gabriel. Family, he says, provides balance and perspective.
After decades of pursuing professional excellence, his definition of achievement has evolved.
Leading major pastry operations and working at internationally recognized properties remain important milestones. But being able to build a demanding career while remaining present for his family is something he considers an achievement of its own.
Fatherhood has also given him a different perspective on ambition. Success is no longer measured only by professional titles, large-scale operations or creative accomplishments.
It is also measured by the life built beyond the kitchen.
The Future of Maison Devoille
Today, Devoille stands at an interesting point in his career.
He has the experience of a chef who has worked across several continents, the leadership background required to manage complex luxury operations and the entrepreneurial opportunity to develop his own pastry identity.
The next chapter is increasingly focused on Maison Devoille and its international potential.
Yet expansion does not appear to mean abandoning the fundamentals that brought him here.
Craftsmanship, creativity, quality, generosity and attention to detail remain at the center of his vision.
His career demonstrates that international success does not always require abandoning one’s roots. In his case, the opposite appears to be true. The lessons learned in Strasbourg, the discipline developed in France and the experience gained around the world have all become part of the pastry identity he is building today.
Christophe Devoille’s journey is ultimately a story about evolution. From a teenager making cakes with his mother to leading pastry operations in some of the world’s most prestigious hospitality destinations, his career has been shaped by curiosity, discipline and a willingness to keep learning.
And perhaps his own philosophy captures the journey best: never forget where you come from, and always know where you want to go.
