Redefining Indian Street Food For A Global Audience
Every great food story begins with a memory.
For chef and entrepreneur Kartik Dubey, those memories were created in his family kitchen, where the aromas of freshly prepared meals by his mother and grandmother sparked a lifelong passion for cooking. What started as childhood curiosity soon became a serious dream that has now evolved into a mission much bigger than personal success.
Today, Kartik is focused on building globally scalable food brands that celebrate authentic street food while giving it a fresh international identity. His vision goes far beyond opening restaurants. He wants to create brands that can stand alongside some of the world’s biggest food chains while proudly representing India’s rich culinary heritage.
At the center of this vision is one simple yet iconic dish, the Indian paratha.
Kartik believes the humble paratha has everything needed to become a global favorite. Just as pizza, burgers, and fried chicken have become internationally recognized through successful food brands, he believes Indian street food deserves the same recognition. By combining authentic recipes with premium ingredients and creative international flavors, he aims to transform the traditional paratha into a modern dining experience without losing its cultural roots.
His dream is not only about taking Indian food abroad. It is equally about introducing exciting international street foods to India, creating a cultural exchange where food becomes a universal language.
A Childhood Passion That Turned Into A Career
Long before working in luxury hotels, Kartik was simply fascinated by cooking.
Watching his mother and grandmother prepare meals taught him that food carries emotions, traditions, and stories. He spent countless hours helping in the kitchen, learning techniques through observation before eventually creating recipes of his own.
The encouragement he received from family and friends gave him the confidence to pursue cooking professionally.
That decision led him to the Institute of Hotel Management in Goa, where his culinary world expanded dramatically.
Studying alongside classmates from different regions of India introduced him to the country’s extraordinary food diversity. Every conversation became an opportunity to learn about new ingredients, regional specialties, and family traditions. These experiences helped him understand that Indian cuisine is far richer than what is commonly represented on restaurant menus.
Those years became the foundation for a career built on curiosity and continuous learning.
Learning That Every Kitchen Has Something To Teach
After completing his studies, Kartik began his professional journey with industrial training at Le Meridien in New Delhi before earning a position at The Oberoi Amarvilas in Agra through campus placement.
Like many young chefs, he dreamed of working in the hot kitchen.
Instead, he was assigned to the bakery and pastry department.
At first, the decision felt disappointing.
Looking back, however, he now considers it one of the most valuable experiences of his career.
Working in pastry taught him discipline, patience, accuracy, and precision. Every measurement mattered. Every detail counted.
Those lessons became the building blocks for everything that followed.
His journey then continued into the cold kitchen, where he mastered international salads, buffet preparation, room service, and a la carte operations before finally reaching the hot kitchen he had always dreamed about.
There, he immersed himself in classical Italian cuisine, learning sauces, pasta, and traditional cooking techniques from experienced chefs at a time when many imported ingredients were still difficult to source in India.
Instead of relying on convenience, chefs relied on technique, knowledge, and creativity.
Those early years shaped both his skills and his mindset.
From India To The World’s Finest Luxury Kitchens
Kartik’s first international opportunity arrived with One and Only Royal Mirage in Dubai.
For someone who had previously only read about premium ingredients in culinary books, working with them every day was both exciting and inspiring.
The experience introduced him to refined French cuisine, luxury hospitality, and world class service standards. Beyond restaurant operations, he also gained valuable experience in managing large scale banquets where consistency and teamwork were essential.
His next career milestone came at Four Seasons Abu Dhabi.
Over five years, Kartik earned three promotions, reflecting both his dedication and his ability to grow as a leader.
During this period, he specialized in American steakhouse cuisine while developing expertise in premium meat preparation, kitchen management, and operational leadership.
One of the most memorable chapters of his career came while leading exclusive private dining experiences for ultra high net worth individuals.
Preparing bespoke culinary events inside luxury villas and private residences taught him that exceptional hospitality extends far beyond the plate.
Creating unforgettable experiences became just as important as creating exceptional food.
Today, Kartik continues expanding his expertise with Rikas Hospitality in Dubai, where he has spent the past one and a half years deepening his knowledge of Mediterranean cuisine, particularly Spanish gastronomy, while strengthening his leadership abilities.
Building Brands That Celebrate Culture
While many chefs dream of climbing the corporate ladder, Kartik’s ambitions have evolved.
After more than a decade in professional kitchens, his attention has shifted toward entrepreneurship.
For the past two years, he has been developing innovative food concepts under Culinary Essence with one clear mission.
He wants to build globally recognized brands that celebrate authentic Indian street food while introducing lesser known international street food traditions to new audiences.
He believes there are countless incredible dishes around the world that remain undiscovered simply because they have never been presented through accessible, modern brands.
By creating memorable dining experiences built around authenticity and innovation, he hopes to connect cultures through food.
His philosophy is simple.
Food has the power to bring people together regardless of language, nationality, or background.
Whether cooking for family, close friends, or clients, Kartik finds his greatest satisfaction in watching people gather around a meal, share conversations, and create lasting memories.
For him, those moments define true hospitality.
Success Beyond Awards
Throughout his career, Kartik has worked with some of the hospitality industry’s most respected names, including The Oberoi, One and Only Royal Mirage, Four Seasons Abu Dhabi, and Rikas Hospitality.
His experience spans French, Italian, Mediterranean, American, and Indian cuisines, giving him a unique culinary perspective that few chefs develop so early in their careers.
One particularly proud achievement came during his leadership at Butcher and Still, where the restaurant received Michelin selection, Gault and Millau recognition, along with multiple Best Restaurant and Best Steakhouse awards.
Yet despite these accomplishments, Kartik no longer measures success through trophies or titles.
He believes growth comes from remaining curious, staying humble, and continuously learning.
His greatest achievement today is not an award hanging on the wall.
It is the vision he is building.
He wants Culinary Essence to become a symbol of innovation, authenticity, and cultural connection while inspiring the next generation of chefs to dream bigger than traditional career paths.
Kartik Dubey’s journey proves that success is rarely defined by following a straight line. Every unexpected assignment, every new cuisine, every challenge, and every opportunity became part of a much larger story.
Now, as he works to introduce Indian street food to global audiences while bringing international flavors closer to India, he is building more than food brands.
He is building bridges between cultures, one unforgettable meal at a time.
